These could easily be used as pumpkin muffins (just take away the frosting). I may just make them for Thanksgiving like that. They are super easy to make, and only bake for 20min. A holiday fav that everyone WILL LOVE.

Recipe: Hummingbird Bakery

Soooo, before I begin about the usual routine… let me tell you why I decided to bake these amazing pieces of goodness. I babysit, nanny, what you want to call it a 12 year old. Halloween, today, is his birthday! And he loves pumpkin pie. So I told him that I’d bake him some pumpkin cupcakes for his birthday. Lets just say he is the little brother I’m glad that I never got, but then again, kind of wish I did. I’ve watched this little munchkin for about 2 years (soon enough I wont be able to call him my “little” or my “munchkin” since he’s pretty much as tall as me. Man, I’m short). He’s a pretty easy kid to hang out with/ watch on a daily basis. So there was no reason that I couldn’t make these for the little. :)

Ok, so the cupcakes. Awkwardly… getting all the ingredients once again as planned so no interesting stories there to tell. And I didn’t even have any troubles making them. The frosting (cream cheeeeeeese) is all home made also. Can I just say that I just love this cookbook?? I mean, obviously! But starting November 28th I will only be posting healthy meals (probably more daily rather and just weekly) and giving out helpful eating tips for throughout the day… I start this new Healthy Competition at my crossfit box… which I plan on winning :)

Milky Way, Snicker, Malt Balls… OH MY

So we have another batch of ice box brownies. So all the goodies inside: Snicker bars, Milky Way bars, gramcrackers, Malt Balls, marshmallows, and some dried apricots. Again, the recipe called for raisins… but I kinda decided to skip over that (again. lol). In my opinion, I think the ice box brownies last week were a tad better, but these just have more chewy goodness inside… so that makes this batch a close second to last week. For the first time, there isn’t crazy story that I have to go along with this weeks post (kinda boring, eh?) The store had everything I needed, and I didn’t forget anything. I guess the only thing that went wrong is that I probably should have gotten more chocolate to melt… but all worked out :)

Ice Box Brownies: Hummingbird Bakery

So these “brownies” are called Ice Box brownies because you don’t have to bake them in the oven (what a relief right?!) So I like to consider them more along the lines of fudge, but hey, if the recipe says brownies … then brownies is what they shall be called :) So my girl, MONICA, helped me make them (more like she just help keep me company while I made them. But I like to call that as helping… so she helped!) She went with me to store to make sure that we got everything, we get back to my house, started making them…. and what do think happened next?! Yes. I forgot an ingredient. The graham crackers! So we just hopped in the car and drove to Walgreens down the street to get some. Mixed all the ingredients together…. put the tray in the fridge and called it a night. (Let me tell you, the little mess I made, and the non-use of the oven tonight totally fit in with my weekend). OH!! And that Christina Twist I added? Instead of putting in raises like how the recipes calls for- I traded in the raisins for chocolate chips :) and then decorated the top with the chocolate chips also!

Awh, blueberries!

Here we go again… yet another baked good from yours truly :)

Blueberry Cake: RECIPE CREDIT: The Hummingbird Bakery.

So tonight was THE BLUEBERRY CAKE. And of course it started off all wrong. Not enough sugar, no sour cream (YES! There is sour cream in the recipe, but you can’t taste it what-so-ever), no powder sugar, no blueberries, no milk, and not enough butter. Went 3 different stores.. because each store was missing one thing that I need. But to top off the running around, I ended up buying the wrong pan to bake the cake in. So it’s shaped as a Bundt Cake when it’s not supposed to shaped as that. I was supposed to get a “ring mold” pan (what the heck is that? I still don’t know. I never found the right “mold”). So I thought that it would totally bake the same. I ended up keeping it in the oven for an hour instead of 40min like the recipe told me too. But of course, it came out just amazing. The outside is a wonderful crispy, golden brown and the inside is amazingly moist… and the blueberries… YUUUUUMMMMMYYYY!!! Just like the recipe says, “blueberries work so well in cakes.” Truth, truth, truth…. And once again, there is NOTHING healthy about it- which I love :) (Unless you can count the blueberries??) But I think the frosting definitely adds a little kick that it’s needed: CREAM CHEESE FROSTING!! Which I also made from scratch. But of course, in typical Christina fashion, I made waaaayyy too much frosting and now there is some sitting in my fridge which WILL be dangerous. But remember… MODERATION. And self control! ;) Over all, yet another adventure when baking with me… and the kitchen became a war zone. Clean up crew tomorrow… I’m taking applications now.
